Mandoré is the cookie for true connoisseurs. With no chocolate, it gives pride of place to the queen of nuts: the Sicilian almond. We prepare it ourselves, slowly caramelising it “chouchou-style” to achieve an irresistibly golden, crunchy praline.
These crisp almond pieces are folded into a light-coloured dough, beautifully soft and delicately scented with real Madagascar vanilla. The combination of unrefined sugars (coconut sugar and brown sugar) brings natural notes of caramel and honey that pair perfectly with AOP butter. The result is a round, comforting and endlessly elegant cookie.

The gourmet tip: Warm your cookie for 2 to 3 minutes in the oven at 150°C. The heat revives the almond caramel and releases the vanilla aroma — the scent in the kitchen is irresistible.
